Scotty, I have a 2019 Toyota 4Runner, rear wheel drive, and I get 16 miles to the gallon.what do you think about flashing the ECU, to get better mpg?

The person with the car AC/Heater that changes temp depending on acceleration… could be a bad AC check valve or vacuum reservoir or related hose if you have an older system that opens/closes doors and valves using engine vacuum. I had an issue with my AC where it would stop blowing out of the forward vents when the engine was under load (going up hill/accelerating). When I was stopped or at cruising speed, it would blow out of the forward vents again. turned out it was a bad AC vacuum check valve. There is also a vacuum powered door in one of the radiator hoses that opens and closes using vacuum to control the flow of coolant through the heater core.

You are 100% spot on about the home A/C vs car A/C. It's cheaper to keep a house as close to the desired temp (This is true for HEATING as well!). The is no economy (and perhaps WORSE economy) by turning the A/C off while away at work. I have mine (old, but timed thermostat) set for 10F warmer for two hours after I leave, and THEN goes to desired temp two hours when I expect to be back. It's never "off" entirely.
