Im restoring a 1979 honda cb750 and im so happy I decided to restore a bike instead of a car first. The amount of fucking bullshit and sourcing, breaking and having to go back and redo things is a headache on this small of a scale. I can only imagine how much worse it would be on a car. Restoration works when you love the project, but when you are depending on it to feed yourself, it just isnt worth it.

When I worked at a body shop I would run 120-130 hours of insurance work in a 40 hour week. So, you should charge 3 times as much for restoration work. Problem solved. Also, don't forget about all the certifications you'll need to do insurance work.
Automotive restoration is dead. No one does it anymore . The few shops left now that do restorations charge too much money that the majority can not afford. You can buy a turn key restored vehicle for half to one third of the price you are going to pay a restorer on labor alone. 80 dollars an hour which is probably on the low side multiplied by the number of labor hours it is going to take to restore the car is basic math. Lotta money X Lotta hours.
Do both mate. Collision repairs first for cashflow and restorations second.

Like many cross roads in life, you have took at the good and bad. With Moab being a smaller town, some tourist may be collision income. But, with brands A-Z even if "LKQ", I would give them the list and tell the them to locate, purchase and shipped. Minnie has a job and you have multiple projects, the collision may help pay monthly bills. Restoration keeps idle hands busy when collision is slow. But start a "Punch" list is needed to keep track of next step or part order, when ordered and from who. Keep both going as many said, we like learning.

Maybe be more demanding of the restoration customer, pay upfront in agreed stages, with a contract stating penalties, terms and conditions to be followed by both parties.
Also look at your choice of subcontractor. How can you just give work to an upholstery company based on what they say they can do? Why not check examples of their work, get references, speak to their customers.
No doubt My Friend Pete will say "I don't have fkin time for all that crap", but the funny thing is, he always has time for bitching about it and putting it right.
Make it easier by preventing avoidable situations.
